Summary

Bromelain is a pure natural plant protease obtained by purification, concentration, enzyme immobilization and freeze drying, which extracted from pineapple fruit stem, leaf and skin。It have been widely used in food protein processing and digestion, antiphlogistic medicine, health care products and other industries.

Theory
Bromelain can make polypeptide hydrolyzed into low molecular weight. There are hydrolyzed amide bond and ester effect.

1、Temperature range: The effiective temperature range of bromelain is 40-60℃, the optimum temperature is 50-60℃.
2、The pH range: The effiective pH range is 4.0-8.0, the optimum pH is 4.5-5.5.
3、The effect of metal ions on enzyme activity: It is easy to be influenced by copper, iron and other metal ions, which reduce the activity, and the Mg2+ and Ca2+ have a certain degree of inhibition on the enzyme activity.

2、Enzyme activity definition：In the determination conditions (37±0.2℃; pH 7.0), the trichloroacetic acid which released by casein has absorbancy on 275nm, when it is fairly with the absorbancy of 1μg tyrosine, the amount of enzyme required is a unit of activity.
3、Product standard：Executive People's Republic of China industry standard GB/T 23527-2009.
